Roasted Lamb Leg

When it comes to preparing a perfectly roasted lamb, you might think about the “we need an expert” kind of situation, but with proper tools and our detailed guide on how to prepare it, you can make a perfect roasted lamb.

Ingredients:

  • 1 Leg Piece of Lamb (Large size - approx 3kgs).
  • Olive Oil (6 tbsp)
  • Chopped Tomato (400g)
  • Garlic Cloves (6 pcs)
  • Oregano (1 bunch)
  • Lemon juice and zest (1 lemon)
  • Pitted Baby Kalamata Olives (Large Handful)
  • Potatoes (1 and a half kg)

Procedure:

Preheat the oven to 240C. To prepare the paste to apply to the lamb leg, grind the garlic cloves, half a bunch of oregano, pinch of salt, and lemon zest together in a pestle and mortar. When you’re done grinding, add lemon juice and drizzle it with olive oil.

Now make holes in the lamb leg with deep cuts using a sharp kitchen knife. Once you’re done making holes and cuts, fill them with the paste you just created.

Add potatoes to a roasting tin and put the remaining olive oil, place the lamb in the potatoes, and roast for 20 minutes. Now, set the temperature at 180C and roast for another one and a half hours. It will give the lamb a crispy and medium-cooked look.

Now, simmer the roasting tin by adding olives and canned tomatoes to the pan juices while keeping the flame on medium. It’s time to serve the lamb with potatoes. Serve the sauce in serving plastic bowls that not only look incredible - but these serving bowls will make your food look luxurious!

Chicken Biryani Recipe

Also known as Sindhi BIryani in most parts of South Asia. You might have heard about Biryani - it isn’t an easy recipe to try. Actually, there are hundreds of different methods to prepare a Biryani. We’ve got you one of the most royal recipes.

Ingredients:

  • Rice (Basmati 1 cup boiled)
  • Chicken (500g)
  • Mint (5 - 6 leaves)
  • Garam Masala Powder (1 tbsp)
  • Vegetable Oil (2 tbsp)
  • Bay leaf (x1)
  • Green cardamom (x3)
  • Black cardamom (x1)
  • Clove (x2)
  • Onion (x2)
  • Green chilies (x5)
  • Turmeric, Ginger paste, garlic paste, red chili powder (1 tbsp each)
  • Hung curd (1 cup)
  • Coriander leaves (2 tbsp)
  • Orange food color
  • Salt and water as required

Procedure:

In a kettle, add 1 cup rice, 2 cups water, mint, bay leaf, green and black cardamom, clove, 2 sliced green chilies, a pinch of salt, and bring it to a simmer. After 15 minutes, drain out the excess water.

In another pot, add vegetable oil, onion, and chicken, and cook it for 5 minutes. Once it starts to simmer, add turmeric, ginger paste, garlic paste, red chili powder, and garam masala powder. Keep the flame at medium, and keep the lid on your pot for extra steamy touch.

In a large pot, add a layer of boiled rice and then a layer of cooked chicken. Keep adding layers until the material is finished. In the end, add orange food color on top and turn the flame on low for extra 10 minutes. Keep the pot airtight throughout the process.

Grilled Lobster

Lobsters are considered to be one of the most expensive food items on the table. If you’re really looking for some royalty on the table, seafood has some amazing offerings.

To prepare grilled lobster, you’ll need to have the following items.

Ingredients:

  • Unsalted butter (8 tbsp)
  • Olive oil (one by the fourth cup)
  • Finely chopped parsley (2 tbsp)
  • Red chili flakes (1 tbsp)
  • Finely chopped garlic (4 cloves)
  • Lemon zest (one lemon)
  • Kosher salt (for taste)
  • Black pepper (freshly ground)
  • 1 lobster (1 lb.)

Procedure:

Combine parsley, butter, red chili flakes, lemon zest, salt, garlic, and pepper. Set aside!

Split the lobster in half lengthwise through its tail and head. Break off the claws and discard the yellow-green part of the lobster. On a baking sheet, place lobster halves with their shell sides facing down and with their claws cracked. Drizzle with olive oil and season with salt and pepper.

Set up a charcoal grill, place lobster halves with their shell side down and claws placed on the hottest part of the grill. Cook for 3 minutes, flip it over, spread garlic-parsley butter, and cook for another 5 minutes. Take it off the grill and serve in elegant serving bowls for parties.

Grilled Honey Goat Cheese Pizza

Ingredients:

  • Pizza dough (1 lb.)
  • Soft goat cheese (4 oz.)
  • Shaved parmesan (⅔ c.)
  • Chopped pecans (¼ c.)
  • Chopped sage (2 tbsp)
  • Honey (2 tbsp)

Procedure:

Prepare a grill to high heat and brush with oil. Shape the dough in the thin crush. Let it sit for 5 minutes and shape it even more. Transfer the dough onto the grill for 2 minutes with a closed lid. Lift the lid, flip the dough over and reduce the heat to low.
