  • Vinegar (2 tbsp)
  • Olive oil (2 tbsp)

Procedure:

Start out by taking a large plastic serving bowl and adding chickpeas, cucumber, carrots, tomatoes, onion, capsicum, and cilantro.

Prepare the dressing by mixing lemon juice, garlic, mustard paste, red chili powder, salt, cumin seeds, vinegar, and olive oil in a separate bowl.

  • 4 small chicken breast fillets (boneless, skinless, cut into cubes)
  • Cherry tomatoes (20)
  • Button mushrooms (20)
  • Large bell peppers (2, each cut into 10)
  • Garlic cloves (3, roughly chopped)
  • Fresh ginger (one knob, roughly chopped)
  • Spring onions (3, roughly chopped)
  • Orange (1, with its zest grated and juice separated)
  • Vegetable oil (2 tbsp)
  • Soy sauce (1 tbsp)
  • Wooden skewers (20)

Procedure:

Blend ginger, garlic, spring onions, and orange zest to a fine paste in a food processor. Add orange juice, soy sauce, and vegetable oil and blend again. Pour this mixture over chicken cubes and leave it for marination for an hour. Next, put mushrooms in the chicken cubes and leave for another 30 minutes.

On wooden skewers, thread the chicken cubes, bell peppers, mushrooms, and tomatoes, and cook each side on a griddle pan for 7 minutes or until it turns golden brown. Meanwhile, keep adding the marinade from time to time while turning the kebabs frequently.

Once the kebabs are done, arrange the skewers on a platter and serve with mint sauce.
