Ingredients:

For the cake base:

  • Oreo biscuits (12)
  • Melted butter (3 tbsp)

For the cream cheese filling:

  • Cream cheese (400 g)
  • Condensed milk (350 g)
  • Vanilla extract (1 tsp)
  • Lemon juice (5 tbsp)

Procedure:

1. Crush oreo biscuits and pour in the melted butter. Spread them in a rectangular tray and toss them in the refrigerator.

2. Add room temperature cream cheese and condensed milk to a bowl and beat on medium speed for about a minute.

3. Pour in lemon juice and vanilla extract and beat on high speed until you get a thick consistency.

5. Now is the time to create magic. Fill 3/4th of the cake with strawberries and the remaining 1/4th with blueberries creating the look of the American flag.

6. Put in the refrigerator for 6-8 hours.

Sponge Cake with Red and Blue Icing

You can turn a plain sponge cake into a perfect 4th of July cake ready to be served on your Independence Day party table. The best part about sponge cake is that it's so easy to make and tastes great. You can make the icing using only three ingredients in no time. 

Simply make a regular, plain sponge cake and decorate it with red and blue cake icing. It's that simple.

1. Crack four eggs in a bowl. Add 1 cup powdered sugar and beat on medium speed until it's doubled in volume and appears creamy.

2. Add 1 cup all-purpose flour and one teaspoon vanilla extract. Gently mix until well combined.

3. Pour in a cake tin lined with parchment paper. Toss it on the countertop twice to remove air bubbles. Put it in the oven at 160°C for 30 minutes.

4. Let it cool while you prepare the icing.

Prepare the Icing

In a large bowl, add four egg whites and beat at medium-low speed until they are foamy. Add two teaspoons of lemon juice and whisk again.

While the beater is on, start adding powdered sugar slowly. You need to add at least 5 cups of sugar into the icing. Turn off the beater when you get a thick consistency.

Divide the icing into three parts in separate bowls. Mix three drops of red food color in one bowl, blue food color in the second, and leave one bowl as it is.

Pour the icing into different piping bags with tips and start decorating your cake. Make alternate rows of red and white icing until 2/3rd of the cake top is covered. Then, fill the remaining with blue icing.
