Now off the heat, stir in two tablespoons of fresh lemon juice and one tablespoon of unflavoured gelatin.

Then transfer it to another dish just so it will cool faster. Then grab the ladyfingers and cut them into thirds. 

Make a Simple Syrup

For the simple syrup, combine one cup of warm water, one tablespoon of fresh lemon juice, and a tablespoon of sugar. 

Now dip the ladyfingers into the syrup for no more than 2 seconds and then layer them into the bottom of the cup. Once your raspberry syrup is at room temperature, you can start making that mousse. 

Topping Mousse Cups

In the bowl of your mixer, combine three cups of heavy cream with six tablespoons of powdered sugar and beat on high speed for two minutes until it’s whipped and fluffy. 

Now transfer the cream into the pastry bag to layer the cream over your ladyfingers. Pipe the cream into the cups over the ladyfingers for half an inch thickness.

Now set your prettiest raspberries into the cups over the layer of cream. Now pipe the remaining mousse over the topping of raspberries, and it’s ready to be served in plastic mini cups.
