1. Chicken Sausages

First, we are going to share the basic recipe for making sausages. After that, you can eat them as it is or make pasta, salads, or sandwiches with them.

You can store the sausages in the freezer before you fry them. They will sit perfectly well in there for a month.

Ingredients: 

  • Chicken (2 cups, boneless, cut into cubes)
  • Salt (1 ½ tsp)
  • All-purpose flour (3 tbsp) 
  • Red chili powder (1 ½ tsp)
  • Garlic powder (1 tsp)
  • Cilantro (4 tbsp, chopped)
  • Corn flour (1 tbsp)
  • Soy sauce (1 tsp)
  • Paprika powder (1 tsp)
  • Water (10 cups)
  • Oil (4 tbsp)

Procedure:

Mash chicken cubes in a food processor. Add salt, red chili powder, soy sauce, garlic powder, paprika, cilantro, corn flour, and all-purpose flour, and blend again. It should be in a smooth consistency.

Lay flat a plastic wrap on the kitchen counter. Take 2-3 tablespoons of this mash in your hands and give it a cylindrical shape (like a sausage). Wrap the plastic wrap around it, fold, and tie its edges together. Cut the excess wrap.

Put these sausages in boiling water and let them cook for 15 minutes. They will rise in volume. Take them out of boiling water and put them in ice-cold water immediately. After about 5 minutes, cut their plastic wrap and fry them.

For frying, put oil in a pan and fry the sausages from all sides until they are light brown. Serve!

2. Pasta with Sausages

It’s incredible how there are so many variations of pasta. One of them is sausage pasta. It tastes so good that you would want to make it again and again.

Our recipe has the right balance of vegetables, cream, cheese, and sausages.

Ingredients:

  • Chicken sausages (5-6)
  • Pasta (1 ½ cups, boiled)
  • Oil (4 tbsp)
  • Onions (4 tbsp, finely chopped)
  • Garlic (3 cloves, finely chopped)
  • Tomato puree (½ cup)
  • Salt (1 tsp)
  • Red chili powder (½ tsp)
  • Black pepper (½ tsp)
  • Red chili flakes (¼ tsp)
  • Soy sauce (1 tsp)
  • Water (½ cup)
  • Whipping cream (4 tbsp)
  • Cheddar cheese (½ cup)

Procedure:

Saute onions and garlic in a saucepan, and add sliced sausages. You can follow the previous recipe to make sausages and cut them into thin slices.

After 2 minutes, add tomato puree, salt, red chili powder, red chili flakes, black pepper, and soy sauce.

Cook for 5 minutes, add water, cover the lid, and let it cook on low flame for 5 minutes. Now add the boiled pasta and incorporate it into the mixture.

Cook for a couple of minutes, add cheddar cheese, mix, and turn off the heat.

Finally, add whipping cream and mix. Finally, it’s ready to serve!

3. Veggie Sausage Sandwich

Make this sausage sandwich for brunch, or put it in your kid’s lunchbox. It tastes great when served with mint or tamarind sauce.

Ingredients:

  • Oil (4 tbsp)
  • Garlic (1 tbsp, chopped)
  • Onions (3 tbsp, finely chopped)
  • Capsicum (3 tbsp, diced)
  • Lettuce (4 tbsp, chopped)
  • Carrots (2 tbsp, chopped)
  • Tomatoes (2 tbsp, chopped)
  • Salt (½ + ¼ tsp)
  • Black pepper (½ + ¼ tsp)
  • Cilantro
  • Eggs (4)
  • Baguette
  • Cheese slices (3) 
  • Chicken sausages (3) 

Procedure:

Saute garlic and onions for a couple of minutes. Add capsicum, lettuce, and carrots, and cook for 3-4 minutes. Add salt and pepper and cook for 10-12 minutes while stirring continuously. Then, take it off the stove.

Crack eggs in a bowl and add cooked vegetables. Add cilantro, salt, and black pepper. Fry the omelet until both sides cook.

In the meanwhile, fry the sausages from all sides.

Put the omelet and sausages inside the baguette. Add a layer of cheese slices and grill. Your veggie sausage sandwich is ready!

4. Sausage Salad with Mint Dressing

Sausage salads are the absolute crowd-pleasers! Make this sausage salad in a large serving bowl and give it a pop of flavor with mint and mustard dressing.

Ingredients:

  • Sausages (2)
  • Peas (¼ cup, boiled)
  • Carrots (¼ cup, sliced, and boiled)
  • Onion (1 medium, chopped)
  • Tomatoes (¼ cup, chopped)
  • Potatoes (½ cup, cut into cubes, and boiled)
  • Cucumber (½ cup, chopped)
  • Cilantro (2 tbsp, chopped)

For dressing:

Procedure:

Fry the sausages from all sides and cut them into thin slices. Transfer them to a bowl and add peas, carrots, onions, tomatoes, potatoes, cucumbers, and cilantro. Give them a mix.

Add mustard paste, lemon juice, salt, pepper, oregano, and garlic powder to a bowl. Mash mint leaves using a muddler and add them to the bowl. Mix and pour over the salad. Enjoy!

  • Oil (¼ cup)

  • Ginger paste (1 tbsp)

  • Cumin seeds (2 tsp)
  • Tomatoes (¼ cup, chopped)
  • Yogurt (¼ cup)
  • Salt (½ tsp)
  • Red chili powder (1 tsp)
  • Black pepper (¼ tsp)
  • Red chili flakes (¼ tsp)
  • Green chilies (2)
  • Water (½ cup)
  • Whipping cream (4 tbsp)

Procedure:

In a saucepan, add oil, and fry sausages for a minute. Add onions and fry them for a couple of minutes. Add ginger garlic paste and cook for two more minutes.

Add salt, pepper, cumin seeds, red chili powder, red chili flakes, yogurt, and tomatoes. Stir for three minutes, add water, and cover the lid for five minutes.

Now add green chilies and stir for a couple of minutes. Finally, add whipping cream, and take it off the stove.
